No-Bake Peanut Butter Fudge Pie







I don't know where you all are at, but where I'm at - well, dogone it - it's hot!  I do enough heating up my kitchen with other things, and I don't really feel like heating it up for dessert too.

But I love dessert.  

Giving it up is not an option.  This peanut butter fudge pie is really decadent, really fast, & really easy.  And, no heating of the oven is required!  








Combine the sweetened condensed milk & chocolate chips in a small pot on medium heat.  Stir until completely melted.  







Scoop the mixture into 2 prepared pie crusts, either graham cracker or oreo crust.  Or one of each.







Beat together the cream cheese and confectioners sugar until creamy.  Mix in the peanut butter, milk, & vanilla & beat until smooth.






Gently fold in the Cool Whip.








Spread the mixture on top of the fudge filled pie crusts.







Drizzle with hot fudge topping.








Freeze until firm.  Let thaw for about 5 minutes before trying to slice.

Or don't - tear into it, and eat it as a handheld snack.












No-Bake Peanut Butter Fudge Pie

Ingredients:

  • 2 prepared pie crusts, either graham cracker or Oreo
  • 2 cups milk chocolate chips
  • 1 (14oz) can sweetened condensed milk
  • 1 (8oz) package cream cheese, room temperature
  • 1.5 cups confectioners sugar
  • 1 cup peanut butter
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 (16oz) tub whipped topping, thawed

Instructions:

Combine the chocolate chips & sweetened condensed milk in a saucepan.  Cook, while stirring, on medium heat until melted.  Divide, and distribute equally between the 2 prepared pie crusts.

Beat together the cream cheese and confectioners sugar until creamy.  Mix in the peanut butter, milk, & vanilla & beat until smooth.  Fold in the whipped topping.

Divide the filling between the two pie crusts.  Drizzle with (warm) hot fudge topping, if desired.  Freeze until firm.

Green Beans with Bacon & Caramelized Onions





Let's face it.  Side dishes can get boring.  We usually have a few side dishes that we go between in our head when we plan our menus & serve our meals.  Mashed potatoes, rice, peas, beans, etc.  We put so much thought into the main dish that we sometimes don't put any thought into what we're serving with it.




These simple green beans with bacon & caramelized onions are anything but boring.  Heck, they might just outshine your main course.  They are delicious!

The leftovers are really good too.  Here's my trick for making them go for a full serving the second time around, and still make them a little bit different.  Dice some potatoes up small,  place in a casserole dish, cover with tinfoil - and then bake at 400 degrees for 45 minutes.  Remove from the oven & mix in the leftover green beans.  Return to the oven for another 10 to 15 minutes, and serve.  




I have provided a basic recipe with no real measurements.  I never measure when I make this.  Fresh green beans are best, but you can do this with canned too.




Green Beans with Bacon & Caramelized Onions

Ingredients:
  • fresh green beans
  • bacon 
  • red onion, cut into strips
  • salt & pepper

Instructions:

Cook your bacon until crispy in a skillet.  Drain on a paper towel.  Drain some of the grease, leaving 2 tablespoons in the skillet.

Steam the green beans for about 6 minutes, or desired tenderness.

Add the sliced red onion to the hot bacon grease.  Saute until caramelized. Stir in green beans.  Cook for 2 more minutes, stirring often.  Season with salt & pepper.

Cherry Limeade





The warmer weather is upon us - but if you live in an area like I do, the cold weather never came this year.

We have already set up our back porch with our picnic table & patio umbrella. The kids outdoor toys are all being used again, and it's getting close to that time where we will need to be getting our pool ready for swimming.  It's also the beginning of the backyard barbecue season, and you need a refreshing beverage to go hand in hand with it.  

It doesn't get much more refreshing than Cherry Limeade!









But, don't wait til the next time you have a barbecue to make it.  Make it sooner than that.  Like right now.

You only need 3 ingredients - lemon lime soda, a jar of cherries, & lime juice. Then, it's done & in your glass, ready to sip.  This stuff is in my fridge more times than not in the warmer months......and this year that seems to be all year long!  I absolutely love the sweetness & the tartness together.  










So, what are you waiting for?  You can't drink my pictures.  Go make some!!







Cherry Limeade

Ingredients:

  • 2-liter bottle of lemon lime soda
  • 3/4 cup fresh squeezed lime juice
  • 3/4 cup sugar
  • 1 (10oz) jar maraschino cherries, with juice
  • thin lime slices 

Instructions:

Chill all ingredients before mixing.

When cold, combine all ingredients in a large pitcher.  Stir well.

Refrigerate for at least 30 minutes before serving for flavors to marry.

*Serve with a ladle if you want pieces of lime & cherry in each glass.

Brown Sugar Bacon Stuffed Waffles







It's that time again...

This month's assignment took me over to Veronica's Cornucopia & the wonderful variety of recipes she has over there.  There were several that caught my eye, but in the end - it was between the brown sugar bacon waffles & 'not your grandma's' chocolate sheet cake'.  

Bacon!

Yep.  That's what did it for me.  





A while back - the Mr. and I were watching television.  I had maneuvered the remote control, so it was on Diners, Drive-Ins, & Dives.  They were showing some diner on there that served waffles which were stuffed with strips of bacon.  How cool is that?!

That episode came to mind when I was in the kitchen prepping the bacon. Hey, why not just leave it whole?  So, that's what I did.  Thank you, Food Network :)






Next time I make these, I think I'm going to lay a couple of pieces of bacon in there halfway - so half of it is hanging out, and you see it better.  But, this works perfectly - and it's so good!  







If you don't have a waffle maker, then I'm sure you could adapt a little with a simple pancake recipe encased in bacon too.  Now, doesn't that sound delicious?

The brown sugar is bacon & the waffle/syrup combination is so good.  The mix of the flavors is perfect, and the result is one amazing breakfast.  Or don't eat it for breakfast & stuff it with sandwich toppings.  I bet that would be good!

However you serve it - it's gonna be good.







Bacon Stuffed Waffles

Ingredients:

For the batter:
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 cup brown sugar
  • 2/3 cups vegetable oil
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups buttermilk
For the bacon:
  • 10 slices of bacon
  • 1/4 cup brown sugar

Instructions:

Preheat oven to 375 degrees.  

Line baking sheet with foil & spray with non-stick cooking spray.  Arrange bacon in a single layer on the baking sheet.  Sprinkle generously with brown sugar.  Place in the upper thrid of the oven & bake until sugar is caramelized & bacon is brown & crispy, about 10-15 minutes.  Remove from oven.  Immediately remove bacon slices using a pair of tongs.  Work quickly or they will stick.  Place them on a cutting board (not paper towels - they will stick!) to cool.

Set up your waffle iron on a level surface & turn on to preheat.  

In a large bowl, combine flour, baking soda, baking powder, salt, & brown sugar.  Whisk to blend.  

In a medium bowl, whisk together eggs, oil, buttermilk, & vanilla extract.  Add the wet ingredients to the dry ingredients  & fold.  Stir gently until combined.  Try not to overmix the batter or the waffles will become tough.

Pour your batter into the waffle maker.  Set a few slices of bacon in the batter - either all the way in or halfway out (whichever your preference).  Cook the waffles per your waffle maker's instructions.  

Serve with butter & syrup.
