This week when working on my weekly menu, I had the goal to not spend a single dime on any meat and instead to shop from my freezer and use up the meat I have stockpiled in there from my local butcher's reduced section. It's amazing how much you can acquire in your freezer in such a short time.
Here's what we're going to be eating for dinner this week:
Baked Ham (I bought 2 hams at Easter & froze one - cheaper this way!), Pineapple Casserole, Salad
Cheddar Bacon Pork Chops, Creamy Gouda & Garlic Potatoes Au Gratin, Green Beans, Mama's Buttermilk Biscuits
Lasagna, Salad, & Olive Garden Breadsticks
Ham & Bean Soup (with the leftover hambone & ham - SO good!)
Bacon Ranch Burgers & Chipotle Sweet Potato Fries

- Cheesy Chicken & Rice & tossed salad
- Spinach & Ricotta Ravioli & spinach strawberry salad

Here is what our menu is looking like this week.
Remember, I plan all of my meals off of 3 components:
- Store Sales + Coupons
- Local Farmers supply
- What I already have on hand
These 3 combined help me create nutritious, budget friendly, & homemade meals for my family.
Breakfasts
- Sausage Gravy Stuffed Buttermilk Biscuits (2 batches, to be reheated thru the week)
- Blueberry Muffins
- Bacon, Eggs, Toast
- Sausage, Eggs, Buttermilk Biscuits
*All breakfasts served with fresh fruit
Lunches
- Chicken Salad (from leftover chicken in the dinner plan)
- Cheese Quesidillas
- Leftovers x3
- Hoagie Sandwiches, Chips & Dip
Snacks
- cantaloupe
- fresh peaches
- sliced cucumbers
- sliced tomatoes
- strawberries & cream pound cake
Dinners
- Zucchini & Crab Cakes, Macaroni & Cheese, Salad
- Chicken Soup, Salad
- Baked Pork Chops, Squash Casserole, Corn on the Cob, Buttermilk Biscuits
- Green Chile Stew, Cornbread
- Chicken Enchiladas
- Homemade Pizza, Salad
