Monster Pudding Cups

They did the Mash, they did the monster mash
The Monster Mash, it was a graveyard smash
He did the mash, it caught on in a flash
They did the Mash, they did the Monster Mash

These Monster Pudding Cups are so much fun to make.  I let my kids go at making the monster faces on these, and they had so much fun doing it!!  We even made one into a witch!  Plus, after they were done decorating them, they were filled with pudding and completely devoured.

Monster Pudding Cups

Ingredients:
  • clear plastic cups, decorated with permament marker.
  • pudding, in a light shade like vanilla (I used cookies & cream since I have some left from the great deal on them)
  • green food coloring
  • crushed oreos - or anything else that you want to make the 'hair' out of. We mixed Halloween sprinkles with the crushed oreos.  Be creative.

Instructions:

Prepare the pudding according to package directions.  Tint it to the desired shade of green with the food coloring.  Scoop it into the clear, decorated cups.  Top with the crushed oreos.

Magic Potion

Double double toil & trouble
Fire burn & cauldron bubble

It's magic potion time!  The kids will get such a kick out of this & it's very easily put together too.  All you need is a few different colors/flavors of KoolAid. This time around, I used red, green, & blue.  You make the KoolAid according to package directions & then pour some of it into ice trays - a different ice tray for each color.  As the ice cubes melt, the 'potion' will turn cool colors & change flavors too!

When the KoolAid cubes are frozen, pop at least one of each into clear cups & top with lemon-lime soda.

Not only are these cool at Halloween, but really any time of the year!

Glow Stick Lanterns

Who would have thought something so easy could be so pretty?

These gorgeous lights are made from glow sticks & mason jars.  Just add a little bit of water to the bottom of a jar & cut open a few glow sticks & dump the insides in.  Seal the jar, and give it a good shake.

You can add just one color, or mix colors.  My personal favorite is red, white, & blue.  It makes a gorgeous pinkish glow, like the one at the top of this post.

You can put these on your front porch or give them to the kiddos to take with them.  Cuuuutteeeee, huh?

Witch Hats

It's another day in the 13 Days of Halloween!

Here's another easy one for you - Witch Hats!  They are made of just 3 ingredients.

All you do to make this clever treat is turn the fudge stripe cookies upside down.  Squeeze the orange cookie icing around the hole of the cookie, and then plop a Hershey's kiss on top.  Serve, and watch the smiles start forming.

Nutter Butter Ghosts

This is such an EASY & QUICK idea for Halloween.  You really have no excuse not to make it, right?  It's also my husband's personal favorite.

All you need are Nutter Butter cookies, mini chocolate chips, & either vanilla flavored candy coating (almond bark) or white chocolate.  Melt the your coating in the microwave or a double boiler & dip the nutter butters in them.  Lay them on a piece of wax paper & place 3 mini chocolate chips on it.  2 for the eyes, and one for the mouth.

Let the coating set & they're ready to eat.

Pumpkin-Carrot Cake {Shaped like a Pumpkin!}

If you are out there looking for the perfect 'ta-da' recipe for Halloween, this is it.  You can actually make this any time during the Harvest season for that matter.  If you want to give a Halloween umph to it, you can also make a Jack-o-Lantern face to it with yellow frosting - just use your imagination!

I made a special Pumpkin-Carrot Cake, and cut each layer in half & stuffed it with cream cheese icing.  Oh.  my.  word.  So good!

You can make the pumpkin cake with any kind of cake you would like, but I do think you would totally love the pumpkin & carrot mixture.  It just screams fall, and it soooooo yummy!

Pumpkin-Carrot Cake {Shaped like a Pumpkin}

Ingredients:

For each bundt cake:
  • 3/4 cup vegetable oil
  • 3 cups all purpose flour, plus more for dusting the pan
  • 1 tbsp pumpkin pie spice
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 3 large eggs
  • 3/4 cup sugar
  • 3/4 cup dark brown sugar
  • 1 (15oz) can pumpkin
  • 1/4 cup milk
  • 2 tsp vanilla extract
  • 1 cup shredded carrots (about 2 carrots)
For the frosting:
  • 4 (8oz) packages cream cheese, room temp
  • 2 sticks of unsalted butter, room temp
  • 4 tsp vanilla extract
  • 6 cups confectioners sugar
  • orange & green food coloring
For the rest:
  • 1 bundt pan
  • 1 flat bottom ice cream cone
  • aluminum foil, rolled into a ball

Instructions:

Heat the oven to 350 degrees.  Lightly oil a bundt pan & then dust with flour. In a large bowl, whisk together the flour,
pumpkin pie spice, baking powder, salt, & baking soda.

In a medium bowl, whisk together the eggs, oil, sugars, pumpkin, milk, and vanilla.  Add the oil-egg mixture to the flour mixture, mixing until fully incorporated.  Stir in the carrots.

Transfer the batter to the prepared bundt pan and bake for 55-60 minutes. Let the cake cool in the pan for 15 minutes before transferring to a wire rack to cool completely.  Rinse out the pan & repeat to make the second cake.

After the second cake has cooled, using an electric mixer, beat the cream cheese, butter, & vanilla in a large bowl until smooth.  Add the confectioners sugar & beat until fluffy, about 3 minutes.

Turn them into a pumpkin:

Cut each cake in half horizontally.  Spread 3/4 cup of frosting on the bottom half of each cake & sandwich with the tops.

Transfer 1/2 cup of icing to a small bowl & tint with the green food coloring. Tint the remaining frosting orange.  Place one cake, rounded side down, onto a serving platter.  Spread the top with 1/2 cup orange frosting & sandwich with the remaining cake, rounded side up.  Frost the entire cake with orange icing.

Spread the green frosting on the ice cream cone.  Place the ball of aluminum foil into the center of the cake, and prop the ice cream cone, open side down, on top of it - angling a little to make a more realistic stem.

To serve, slice into the top layer first & when that's gone, dig into the bottom layer.
