Homemade Orange Julius

Welcome to a surprise addition of the Secret Recipe Club!  When we all made our posts the other day, one blogger was 'orphaned' by another blogger - so a lot of the other members (including myself) have decided to adopt her blog.  And, boy is her blog a great one to adopt!

Connor's Cooking has a LOT of great recipes to chose from including Apple Pie Dip & Loaded Flank Steak.  Yum!  But, once I saw the homemade Orange Julius, I had to make one - immediately.

Homemade Orange Julius

Ingredients:

  • 1 can of orange juice concentrate
  • 1.5 cups milk
  • 2 teaspoons vanilla extract
  • 3 tablespoons sugar
  • 1 cup ice

Instructions:

Blend it all together in your blender.  Serve & enjoy!

Chipotle Ranch Sauce

I love condiments.  BBQ sauce, ketchup, ranch dressing, hot sauce, - they are all awesome.  I have a very good friend that loves ketchup so much that she even makes ketchup sandwiches.  (You know who you are!).  But as much as I love my condiments - sometimes you just need something a little...well, jazzed up.

My Chipotle Ranch Sauce is jazzed up alright.  It's jazzed up with a kick.  Jazzed up condiments with a kick equals a happy dipping experience.

I keep a jar of this in my fridge at all times.  Try it with your french fries, chips, burgers, hot dogs, - anything you dip...or anything you put something like mayo on...it just makes it all the better.

Chipotle Ranch Sauce

Ingredients:

  • 16oz bottle Ranch dressing
  • 2-6 chipotle peppers in adobo sauce (depending on your level of braveness)
  • 1 tablespoon minced garlic
  • 1/2 teaspoon - 1 teaspoon seasoning salt
  • 1/2 teaspoon - 1 teaspoon black pepper

Instructions:

In a food processor or blender, combine the Ranch dressing, chipotle peppers in adobo sauce, minced garlic, salt & pepper.  Start off with 2 chipotle peppers, & taste.  If you want more heat or smokiness, add another & puree until you get the kickness level you desire.  I like it spicy so I prefer to add more.

Menu Plan Monday 8/15/11

Yes, I know I am a bit late posting this - but better late than never, right?

I have an excuse though.  I was busy relaxing.  My friend & her little girl invited myself & my kids over to their wooded lakefront getaway property, and it was great.  The kids played, we swam in the lake, and then we sat in the shade & ate Jalapeno Popper Dip.

It doesn't get much better than that.

Here is what our menu is looking like for the week.

Secret Recipe Club - Pan Seared Chicken Sandwiches w/ Pesto Mayonnaise

This is my very first month to be involved in a fun cooking adventure called The Secret Recipe Club, where you are assigned a cooking blog & make a recipe from there.  No one knows who has tried what recipe & from whom until they see the posts today.

Neat, right?  I think so!

The website that I have this month is Jane over at TheHeritageCook.com.  She has a great cooking blog over there & while browsing her recipes I came across these Pan Seared Chicken Sandwiches with Pesto Mayonnaise that looked awesome.  So, I whipped them up & not only were they delicious, but they were super easy too!

Thanks, Jane!  :)

Pan Seared Chicken Sandwiches w/ Pesto Mayonnaise

Ingredients:

  • 1/2 cup olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp dijon mustard
  • salt & pepper to taste
  • 1 tsp dried thyme
  • 2 large boneless, skinless chicken breasts
  • 1/2 cup mayonnaise
  • 3 to 4 tbsp prepared pesto sauce
  • 2 medium tomatoes, cored & sliced
  • 1 head green leaf lettuce
  • 8 slices bacon, fried to a crisp
  • 8 slices Monterey Jack cheese
  • 4 soft croissants or other sandwich rolls (I used homemade onion sandwich rolls)

Instructions:

In a bowl, combine the olive oil, vinegar, mustard, salt, pepper, & thyme. Whisk until smooth.  Pour into a resealable bag.

Using a sharp knife, slice chicken breasts in half horizantally creating 4 thin cutlets.  Place in the bag along with the marinade.  Marinate in the refrigerator for 30 minutes while preparing the other ingredients.

In a small bowl, combine mayonnaise & pesto.  Set aside.

Heat a pan on the stove on medium heat until really hot.  Place the chicken (discard the marinade) in the pan & cook for a couple of minutes on each side until done & nicely browned.  Place the cheese slices on top & let melt.

Spread the pesto mayonnaise on each side of the bread.  Place lettuce leaves on the bottom halves of the rolls.  Place the chicken on top of the lettuce.  Top with 2 slices of bacon & sliced tomatoes.

Sunday Savings

I have been on a couponing break for the last few weeks, but really started back again this week.  I have been a couponer for 10 years now, and I get into periods where I just don't feel like doing it any more...so I stop until I feel the want/drive to get back to it.

I am by no means an extreme couponer, and honestly am not a fan of the show because they show scenes that are not going to happen for regular consumers because the stores are waving their coupon policies to get their 5 minutes of fame.  But, we won't get into all of that...

I go to SouthernSavers.com & TheKrazyCouponLady.com to match my coupons to my sales.  I get my coupons online, from the Sunday paper, AllYou magazine, & from calling/emailing companies.

Here is how I fared this week!

Harris Teeter

CVS

Before coupons/sales:  $58.03  After coupons:  $6.03

Walgreens

Before coupons/sales:  $60.90  After coupons:  $3.71

If I did not shop the sales with coupons, I would have spent $705.56 & after coupons, I spent $95.88.  A total savings of $609.68!!

I shopped the reduced section of my grocery store for meat (forgot the picture) & bought 2 pounds of ground chuck, 2 family size packs of chicken breasts, 2 racks of baby back ribs, & 1 package of pork chops for just $26.09.  I will be submitting a beer rebate (no beer purchase required!!!) for $15, bringing my grand total for all that meat to just $11.09!!

How did ya'll do this week?
