Let's face it. Side dishes can get boring. We usually have a few side dishes that we go between in our head when we plan our menus & serve our meals. Mashed potatoes, rice, peas, beans, etc. We put so much thought into the main dish that we sometimes don't put any thought into what we're serving with it.
These simple green beans with bacon & caramelized onions are anything but boring. Heck, they might just outshine your main course. They are delicious!
The leftovers are really good too. Here's my trick for making them go for a full serving the second time around, and still make them a little bit different. Dice some potatoes up small, place in a casserole dish, cover with tinfoil - and then bake at 400 degrees for 45 minutes. Remove from the oven & mix in the leftover green beans. Return to the oven for another 10 to 15 minutes, and serve.
I have provided a basic recipe with no real measurements. I never measure when I make this. Fresh green beans are best, but you can do this with canned too.
